Was craving a delish dip with crackers at the moment and occurred to have some eggplants that wanted to be cooked so made some Baba Ganoush!
RECIPE
Preheat oven to 400. Slice eggplant lengthwise and sprinkle with salt and pepper. Cook dinner for 35 minutes and scoop out the insides and put aside.
