TERIYAKI MUSHROOM UDON NOODLE STIR-FRY (Serves: 2 )
INGREDIENTS:
✅100g udon noodles
✅ 1 onion, sliced
✅ Three stalks spring onion, sliced
✅ 1 crimson capsicum, sliced
✅ 300g mushrooms, sliced (I used combo of white button & shiitake)
✅ 1 tablespoon oil
Teriyaki Sauce:
✅1/Four cup soy sauce (or tamari)
✅2 teaspoons darkish soy sauce
✅1/Four cup water
✅2 tablespoons maple syrup
✅1/2 tablespoon rice wine vinegar (or white vinegar)
✅ 1 teaspoon minced garlic
✅ 1 teaspoon minced ginger
✅ Cornstarch slurry: 1 tablespoon cornstarch + 1 tablespoons water
METHOD:
1. Make the TERIYAKI SAUCE: In a small saucepan on medium-high warmth, mix the water, soy sauces, maple syrup, garlic & ginger. Convey to a boil, then add the cornstarch slurry & cut back warmth right down to a simmer. Prepare dinner, whisking as wanted, till the teriyaki sauce is shiny & barely thickened. Modify seasoning to style with soy sauce/water. Put aside
METHOD:
1. Prepare dinner the udon in line with packet directions. Drain & put aside.
2. Warmth up the oil in a wok on excessive warmth, stirfry the onions & capsicum for Three minutes till barely tender. Add within the mushrooms + half the Teriyaki sauce & prepare dinner for an additional Three minutes
3. Add in your noodles and the remainder of the Teriyaki sauce, toss till all of the noodles are coated in sauce.
4. Stir-fry for an additional 5-6 mis, including a splash of water in case you want
