Warmth 2 teaspoons olive oil, or a bit of veggie broth, in a big saucepan or Dutch oven over medium warmth.
Add 1 medium shallot (small cube) and prepare dinner for 1 minute.
Add Three minced garlic cloves and prepare dinner for 1 minute extra.
Add 8oz chopped cremini or Child Bella mushrooms, and 1 teaspoon dried thyme (or 1 tbsp chopped recent thyme leaves). Cook dinner for about eight minutes, or till the mushrooms soften and launch their water.
Add 3/four cup veggie broth to deglaze the saucepan, eradicating the browned bits from the edges and backside of the pan.
Simmer for two minutes.
Add 2 tablespoons tamari, and half teaspoon balsamic vinegar and blend.
Add full fats canned coconut milk, half cup at a time, till desired consistency (from 1-14ozcan).
Simmer for 10 minutes, including extra veggie broth or coconut milk to style.
Season with salt and black pepper. Garnish with 1-1/2 tablespoons chopped recent parsley.
