Vegan butternut squash soup for the beginning of fall!
INGREDIENTS
1 lb of peeled and cubed butternut squash
1 field of veggie broth
1 can of coconut milk, with some saved for topping
Handful of sunflower seeds, toasted
1 white onion, diced
Salt and pepper to style
1 tsp nutmeg
Sprint of cinnamon
half of tsp ginger
1/four tsp TumericRECIPE
Preheat oven to 400. Season squash with cinnamon, nutmeg, salt and pepper. Add olive oil and cook dinner for 20 minutes. I like how the color turned out. I used frozen banana🍌, spirulina powder🧶, vanilla protein powder and coconut yoghurt🥥. The additon of coconut yoghurt🥥 was an excellent thought, it added a lot to the flavour and texture. I topped it with some puffed rice. I may solely eat half, however hey, it was scrumptious. 🥰 It was good to have one thing totally different.
