Porcini Mushroom Risotto
Substances:
1 small white onion or 1/2 of a really giant one โ very finely chopped (I’ve blitzed it in my meals processor to avoid wasting tears and since I’m not excellent at chopping)
2 cloves of garlic โ crushed
About 150gr of chestnut mushrooms โ sliced
1/2 cup of dried porcini โ soaked in some heat water for at the very least 1 hour (donโt discard the water!)
About 1 litre of veggie inventory
1 teaspoon of brown miso paste
1 cup of risotto rice (you can even use brown rice however risotto rice helps massively to have a creamy and gloppy consistency)
3-Four tablespoons of dietary yeast ( or much more, in my books the extra dietary yeast, the higher!) + additional for sprinkling
A glug of olive oil for frying
Salt & pepper to style
Elective โ I prefer to prime it with some additional mushrooms panfried in Tamari, you donโt should but when wish to go the additional mile right here is how:
About 5-6 chestnut mushrooms
A beneficiant splash of Tamari or soy sauce
