Substances:ā£
~ 1 zucchini, spiralizedā£
~ 2 cups veggie inventory/brothā£
~ 2 stalks lemongrass (white half), poundedā£
~ three slices galangalā£
~ 2 lime leavesā£
~ onion slices (as most popular)ā£
~ 2 Thai chilis, choppedā£
~ 2 tablespoons vegan ‘fish’ sauce (recipe in woon.hengās story highlights)ā£
~ 1 teaspoon coconut sugarā£
~ half – 1 tablespoon Tom Yum/purple chili pasteā£
~ half cup heirloom tomatoes, halvedā£
~ half cup Bella mushrooms, halved
~ 4oz pan-fried agency tofuā£
~ salt to style, lime juice, coconut milk, chopped cilantroā£
ā£.
In a 2-quart pot, convey the veggie inventory to boil, then add in lemongrass, galangal, onion slices, chilis & lime leaves. Place lid over, flip warmth to low & let simmer for 10 minutes till fragrant. Season with tom yum/chili paste, ‘fish’ sauce, coconut sugar & salt (add lime juice for a tangier soup).
Add in tomatoes, mushrooms, tofu & proceed to prepare dinner for one more 2mins till mushrooms are absolutely cooked by way of over low-med warmth. Lastly, add within the desired coconut milk (I used 1/four cup) & flip off the warmth.ā£
To serve, place zucchini noodles in a bowl & ladle heat soup over. For those who choose absolutely cooked zucchini noodles, add them in soup & prepare dinner for 30 secs earlier than serving. Get pleasure from!⣠.
